Whip the curd cheese, butter, 2/5 of the eggs, 3/5 of the egg yolk and the salt into a foamy mass, stir in the breadcrumbs and finally the snow beaten from 3/5 of the eggs.

Form small dumplings with two tablespoons, cook in enough salted water for 10 minutes, arrange on a warmed plate, baste with brown butter and sprinkle with cinnamon and sugar.
