Sift the spelt flour, leaving 50 g of bran. Put the flour in a suitable bowl. Make a well in the center and melt the butter in the water, then pour it into the flour well. Add the egg and the juice of one lemon. Knead everything into a firm but elastic dough and work it heartily for 10 min.

Divide the dough in half, form two balls and brush them thinly with oil to prevent the surface from drying out.

Leave to rest for half an hour under a warmed saucepan. Now continue to prepare according to the respective recipes.
