Coronation Chicken – Poultry Salad

Place the chicken in the simmering water and soften with onion, bay leaf spice and cloves. Remove the skin and bones and cut the meat into large pieces.

For the sauce, mix all the ingredients, add the juice of one lemon, salt and freshly ground pepper to taste. Marinate the chicken pieces in it.

Tip: serve with new potatoes and green leaf salad.
