For the spelt bread, use a loaf pan 260 mm long.
Mix water with salt and honey in a kneading bowl. Pour the ground spelt on top and crumble the yeast over it.
Knead the dough until it comes away from the baking bowl. If the dough is too firm, add more water, if it is too mushy, add some more spelt flour. Let the dough rise for 30 minutes with the lid closed.
Attention: the dough must not dry up!
Now knead the dough vigorously and fill it into the greased form. Let rise again for 15 min.
Now brush the surface of the dough with water so that it does not dry out and put the mold in the cold oven. Turn on the oven and heat to 200 degrees Celsius. Bake for 35 minutes, and then leave in the turned off oven for another 10 minutes.
Remove from the mold and sprinkle with water and let the spelt bread cool.
