For the spinach soup, defrost the frozen spinach with (soy) milk in a saucepan. If necessary, add more (soy) milk until the desired consistency is reached.

Season with vegetable soup powder, grated nutmeg and chopped garlic. Blend the soup through with a hand blender, then add the peas and simmer some more until warm.

Serve in large, deep soup plates, pile the frittatas in the center of the plates and sprinkle with Parmesan.
