Prepare the eggs hard. Sort out the spinach leaves and rinse them thoroughly. Finely chop the onion and the anchovy fillets. Remove the shell from the eggs and chop them finely as well.
Make the spinach in a saucepan at low temperature in its own juice for 5-10 minutes. Then put it in a sieve and drain. Coarsely chop the spinach.
Heat the oil in a saucepan and fry the onion until translucent. Add the spinach and cook for 5 minutes until soft. Season with pepper and nutmeg.
Add the anchovy fillets, the eggs, the Parmesan cheese and the whipped cream. Season the spinach carefully with salt.
Serve with long grain rice or white bread.
