For the spelt vanilla crescents, mix spelt flour, almonds, honey, butter and ground vanilla beans with the egg yolks and mix to a dough. Knead well, but not too long. Refrigerate for 2 hours.

Divide the dough into small pieces and form small croissants, place them on baking sheets and bake the spelt vanilla croissants in the preheated oven at 180°C.
