For the wholemeal bread, put all dry ingredients together in a bowl. Dissolve the yeast in lukewarm water and add to the flour, knead with the dough hook until smooth. If necessary, knead in some more flour.
Let the dough rise in a warm place, it should double in size. Knead the bread dough again, form small loaves or place in a loaf pan (bread maker). Let it rise again.
Then bake at 180°C for about 45-55 minutes. The baking time depends on the size of the loaf. Just before the final baking, brush with water to achieve a shiny crust. When it feels light to the touch and sounds hollow when tapped on the bottom, it is done.
Wrap the whole wheat bread in a cloth and place on a rack to steam out.
