Peel, rinse and dry the potatoes. Place each potato, one at a time, on a tbsp. and score with a sharp kitchen knife in a fan shape.

Brush an ovenproof dish with a tiny bit of olive oil. Place the potatoes with the cut side up. Season with salt and brush with the remaining oil. Pre-bake in the heated oven (electric kitchen stove 175 degrees Celsius /fan 150 degrees Celsius /gas: level 2) for about 20 minutes.

Finely grate cheese. Rinse sage, put a little aside for garnish. Pluck the leaves from the rest.

Stir whipped cream and milk, pour over potatoes. Spread sage leaves evenly on top. Finally sprinkle with Parmesan cheese. Bake potatoes for approx.

another 40 minutes until golden brown. Cover with parchment paper if necessary. Garnish with sage leaves.

Serve with smoked salmon or a small pork cutlet.

Drink: A cool beer.
