For the spelt nut strudel, mix both types of flour with the salt and make a well in it. Mix the whipped cream with yeast and honey and pour into the well.

Stir with a fork and let the mixture rise, covered, for one hour. When the dampfl shows clear bubbles, it is ready. Knead everything well together. Knead vigorously for at least 5 minutes with a machine, much longer by hand.

When the dough forms a ball, cover again and let rise for another hour. In the meantime, prepare the filling.

To do this, toast the hazelnuts in a pan without fat, grate and mix with as much jam until the desired consistency is reached, sugar to taste.

Roll out the dough on some flour, spread with filling and form into a roll. Place the roll in a loaf pan lined with baking paper. Bake the spelt nut strudel at 170 degrees for about 30 minutes.
