For the nut strudel, first prepare the yeast dough. Make a dampfl from dry yeast, melted butter, sugar, warm milk and about half of the flour.

Knead the finished dampfl with the remaining flour, salt, lemon zest and the beaten eggs (put some aside for brushing) into a dough. Let rise in a warm place, covered with a damp cloth, for at least 1/2 hour.

Knead again and roll out into a rectangle on a pasta board with plenty of flour. Brush with melted butter. For the filling, mix the grated nuts well with the remaining ingredients.

Spread the nut filling on the dough and roll it up from the wide side. Place on a baking tray lined with baking paper and brush with the remaining egg. Bake the nut strudel at 160 °C.
