Instructions:

For the mint ice cream, wash the apple mint and pluck off the leaves. Peel the apples, remove the cores and bring to the boil with the apple juice and sugar.

Remove from heat and add the mint leaves, puree the mixture and let cool, pour into popsicle molds and freeze for about 4 hours. Remove the mint ice cream from the molds and enjoy.
