Bring milk to a boil in a saucepan, sprinkle in semolina, salt and cook to a not too stiff porridge. Remove the pot from the heat, let the porridge cool down a bit, then add the egg.

Form a sample dumpling with two teaspoons and place in the boiling beef broth. If the result is satisfactory, also form gnocchi from the remaining dough and simmer gently in the beef soup for 5 minutes.

Serve semolina gnocchi soup with chives.
