Schnitzel Roll with Waldorf Salad

Rinse meat, dry and season with salt and pepper. Press the sausage meat mixture out of the skin. Knead together with pistachios and minced meat. Spread the mixture on the meat and roll up from the long side.

Pin with wooden skewers and wrap with spaghetti. Heat oil in roasting pan. Brown roast in it all around. Roast in hot oven at 175 °C for about 2 hours. Pour on clear soup gradually. Drain celery leaf salad. Clean, rinse and chop celery. Rinse, core and dice apples. Cut off pineapple. Chop nuts. Stir mayo and yogurt, season to taste. Mix with prepared salad ingredients. Fill into hollowed out apples and peaches as desired and serve with roast. Serve with mustard cream and mango chutney.

Tip: Use creamy natural yogurt for an even finer result!
