For the gnocchi alla napolitana prepare a potato dough from the ingredients. Peel, wash and boil the potatoes until soft.

Put flour on a clean work surface, add potatoes while they are still hot, form a pit, put butter in it, add spices, herbs and the egg and knead quickly.

Form the dough into a roll, cut off pieces to form balls and flatten with a fork. Meanwhile, bring salted water to a boil and cook the gnocchi until they float to the top.

Then strain and rinse with cold water.

For the sauce, chop the onion and dried tomatoes, sauté in olive oil and add the strained tomatoes.
