Prepare medium-stiff yeast dough, knead tightly, form balls and let rise a little cooler at the beginning, later in warmer room. Brush with egg, score 3 times with sharp kitchen knife and bake at about 200° Celsius.

My version:

Toss all ingredients (should be semi-warm) together (preferably in a large Tupperware yeast dough bowl), and mix until dough is nice and compact and smooth and wraps around the mixing sticks. Next, place the baking bowl in tap water and let the dough rise for 1-2 hrs. When the dough has risen, shape balls (each your choice of size from rolls to Wecken, I like the small ones best). Next, brush with egg, and either cut in the middle, or notch like the peace symbol. Bake as above, or with hot air at about 170 ° C, in about 35-40 minutes.
