Saziwi – Turkey with Walnut Sauce

Rinse turkey under running water. Bring to a boil, barely covered with water. Cook in a closed pot for half an hour. Skim in between.

Remove the turkey from the clear soup. Season all around with salt and place in the grease pan of the oven. Put into the cold oven, switch to 200 °C /gas mark 3 and roast for about one and a half hours.

In the meantime, peel and dice the onions, grind the walnuts. Add half the onions, crushed garlic cloves and vinegar. Season with salt, sweet coriander, paprika, ginger, cinnamon and ground cloves. Bring to a boil over low heat, stirring throughout. While stirring, gradually add 3/8 l turkey broth. The sauce must be viscous.

Cut turkey into pieces, place in a bowl and sprinkle with remaining diced onion. Pour hot sauce over it.

Serve with: corn porridge or long grain rice.
