Perhaps your new favorite bean dish:

1. rinse lentils under cold running water and drain. Heat ghee or possibly oil in a saucepan, add onions and sweat for 2 min. Add garlic, ginger and spices and sauté lightly for 1 minute, stirring frequently.

2. add tomatoes, lentils, melanzani and 600 ml clear soup, mix well. Then cover and simmer on low heat for 20 minutes.

Add the red and green peppers and simmer for another ten minutes until the lentils are soft and have absorbed all the liquid.

In the meantime, rinse the long-grain rice under cold running water. Drain and place in another saucepan with remaining clear soup. Bring to a boil, add bean pods, cauliflower and mushrooms. Next cover and do 15 min until long grain rice and vegetables are tender. Remove from heat and set aside covered for 10 min.

5.Add lentil mixture and cashews to cooked long grain rice form and mix lightly. On preheated serving plates form and garnish with hard boiled quartered eggs and cilantro sprigs. Bring to table hot.

A delicious mixture of vegetables, basmati long grain rice and brown lentils makes a healthy and nutritious dish.
