Cut mushrooms in half, sprinkle with salt and pepper, dust well with flour, pass through beaten egg and coat in breadcrumbs, then fry in hot shortening until light brown. Mix 10 dkg mayo with 1 tbsp chopped parsley, onion, pickled gherkin and season with chopped juice of a lemon, capers, anchovies and sugar.
