Ginger Strips

For the ginger strips, beat 3 yolks with a whole egg and the sugar until very foamy.

Then mix the flour with the baking powder and gradually stir into the batter, alternating with the ginger and lemon zest. Beat the egg whites with salt until stiff and fold into the batter.

Grease a baking tray with the butter, spread the dough on it, let it rest for a good 1 hour at room temperature and then bake it at 180° in a preheated oven until golden brown.

When cool, cut into strips and serve the ginger strips.
