Instructions:

For the sheet cake with currant and thyme snow topping, wash the currant and grate the berries from the stems. Beat the egg whites with a pinch of salt until stiff.

Cream sugar, vanilla sugar and butter. Stir in the yolks one at a time. Pour in the milk and stir well.

Sift the flour with the baking powder and fold into the mixture. Finally, mix in the beaten egg whites and the currants.

Bake in the preheated oven at 180 degrees for about 20 minutes.

For the snow topping, beat the egg whites to a firm snow. Beat the egg whites until they turn whitish, then gradually add the sugar.

Stir the finely chopped thyme into the snow. Spread the beaten egg whites on the baked currant cake and brown for 10 minutes at 180 degrees.

Allow the sheet cake with currant and thyme snow to cool and serve garnished with a sprig of currant and thyme.
