*****- Preparation -***** Soak bulgur in water for 10 min, then drain thoroughly. Chop scallions, parsley and mint. Mix into the bulgur

Finely dice tomatoes and cucumber. Add to the lettuce with the olives. Mix pepper, juice of one lemon, salt and olive oil. Mix into the lettuce. Steep briefly.
