Soak bread in water and wring out.

Peel roe and prepare with bread and garlic to a paste.

** Variation

Taramasalata can also be made in a hand mixer, but the mixture will be thicker in consistency. Then it must be thinned with a small amount of whipped cream or additional juice of a lemon.
