Rinse the cod fillets in cold water and remove any bones. Bring the fish stock to a boil in a small saucepan. Add cod and cook over low heat for about 5 minutes, until flaky to the touch. Remove fish fillets and drain. Wash dill, toss dry and remove coarse stems. Finely chop two-thirds of the dill, setting aside the remaining bunches for garnish. Puree or very finely chop the cod fillets.Mix in a bowl with lemon juice, dill and crème fraîche. Season the spread with cayenne pepper, salt and pepper to taste. Dust with paprika powder and garnish with the remaining dill bunches.
