For mushroom escalopes of beef, salt and pepper beef escalopes. Sear in a little oil and remove from the pan. Preheat oven to 160 degrees convection.

Finely chop the onion and fry it in the pan juices. Put the beef cutlets back in, pour in half of the beef broth and simmer, covered, in the oven for about 3/4 hour.

In the meantime, cut mushrooms and steam them briefly in a pan with a little butter. Add mushrooms to the beef cutlets, pour in 2nd half of the beef broth and continue to braise for about 1/2 hour.
