Remove the peel from the oranges like an apple, that is, with the white skin. Cut the flesh into small cubes and remove the seeds, if necessary. Mix the honey, juice of one lemon, orange cubes and powdered sugar and infuse for fifteen minutes if possible.

In the meantime, whisk QimiQ until smooth. Add crème fraîche and stir until smooth. Next, accurately stir in orange cubes along with marinade. Leave the cream to cool for about an hour, until it has firmed up a little.

To finish, cut the chocolate into fine shavings with a peeler. Arrange the orange cream in dessert bowls and sprinkle with enough chocolate shavings to cover.

Therefore, the product can be used in cold cuisine for the preparation of creams, puddings, etc. Easy and practical to use. The qualities of QimiQ are particularly effective in combination with yogurt, blanc, whole milk battu or curd. 250 g of QimiQ can be substituted by mixing 2 1/2 dl of stiffly whipped cream with 2 1/2 sheets of melted gelatine.
