For the curd cheese golaches with honey pears, first preheat the oven to 180 degrees. Mix curd cheese (20%) with an organic egg, vanilla sugar, cornstarch and cinnamon to taste.
Peel, core and dice a pear and marinate with a little honey and a handful of coarsely chopped walnuts. Unroll the puff pastry (from the refrigerated section) and cut into 8 squares. Spread the curd mixture and the pear pieces in the center. Whisk 1 egg yolk to coat the corners and form golaches. Place on a baking sheet and brush with the remaining egg. Bake the curd golaches with honey pears for about 15 minutes until golden brown.
