Roast bacon without fat in a coated frying pan until crispy, remove, drain on kitchen roll, set aside.

Warm clarified butter in the same frying pan, add potatoes, fry lightly, turning occasionally, season with salt.

Add sausage slices, fry for about two minutes. Shape quantity into a flat cake. Cover and continue to fry at low temperature for about TEN MIN until a golden crust has formed.

Turn hash browns out onto a flat plate to turn. If necessary, add a little clarified butter to the frying pan, slide the Rösti exactly from the plate back into the frying pan using the frying spoon, continue frying for ten minutes.

Place the cheese on top like a brick, drizzle with the wine, let it melt with the lid closed.

Serving: Slide hash browns onto a warmed platter, garnish with bacon slices set aside.

Serve with: Beet and endive salad.

Tips Gschwellti for Rösti can also be deep-frozen: grate portions (approx. 500g) on the Rösti grater, form into freezer bags, press flat, seal, freeze. Shelf life: about 2 months.

Can be prepared: Grate Gschwellti 1/2 day in advance on the Rösti grater, place in plastic bag or possibly covered baking dish to cool.
