For the Radetzky rice, rinse the rice with cold water and simmer in the milk with salt and sugar over low heat until soft (stirring in between).

Heat THEA, brown the sugar in it, deglaze with water, add citrus juices, bring to a boil and mix with the rum to the overcooled rice. Grease a deep baking dish and alternate rice and jam or compote to ⅔ height.

Beat egg whites with vanilla sugar until creamy and spread over rice mixture. Bake at 120 degrees in preheated oven for 20 minutes until lightly browned. Serve the Radetzky rice immediately.
