For the Sopa de Galinha, wash the soup chicken and cut it into 16 pieces.

Heat the oil and butter in a saucepan and brown the chicken pieces. Remove the chicken pieces.

Peel onion and chop finely. Peel garlic and crush with salt. Sauté both in the pan until the onions become translucent.

Add half of the parsley and tomatoes. Add chicken parts and pepper and deglaze with water until everything is covered.

Simmer on low heat for 90 minutes until the chicken is cooked. Take out the chicken again, remove the boils and put the meat back into the soup.

Add well washed long grain rice and 2 cups of water and simmer gently until rice is cooked.

Serve the Sopa de Galinha hot and sprinkled with chopped mint and parsley.
