Pork Tenderloin Wrapped in Arugula Leaf Dough

Preheat oven to 200° Celsius. Apply fillet rubbing neatly with the spices. Heat oil in a frying pan. Brown the meat on all sides.

Remove from frying pan and let cool.

Clean and rinse arugula. In a saucepan, bring tap water to a boil with a small amount of fondor. Cook arugula for one minute, drain and cool immediately with tap water. Roll up the puff pastry. Place half the amount of arugula leaves the size of the fillet on top. Place fillet on top and spread remaining arugula on top of meat. Separate egg. Brush edges of dough with egg white.

Roll fillet in the dough. Place meat roll on a baking sheet lined with parchment paper. Bake in oven for about 30 minutes. Mix egg yolks with a tablespoon of tap water. After 150 mmin. brush the dough with it. Let the meat rest for 10 minutes after baking, then cut into slices.

Serve with buttered vegetables and potato patties.

Tip: Always use aromatic spices to refine your dishes!
