Instructions:

Blanch (scald) the tomatoes, rinse, skin and cut the flesh into small cubes. Cut the mozzarella into small cubes.

Cut the Parma ham into thin strips. Rinse arugula, rub dry and cut into strips.

Heat olive oil in a frying pan and briefly pull half of the leaves through the oil. Set remaining arugula aside.

Roll out dough thinly so that 8 small pizzas can be cut out. Top pizzas with diced tomatoes, season with salt and season with pepper.

Sprinkle with ham cubes and the mozzarella cubes. Place the roasted rocket leaves on top. Sprinkle with the grated parmesan cheese. Drizzle a little olive oil over the top.

Bake in the oven at 175 degrees for 10-15 min. Remove pizzas and sprinkle with the fresh arugula before serving.
