Briefly place the apricots in boiling water, rinse and peel. Pit the apricots and weigh out the pulp.

Dice the pulp and bring to a boil with the preserving sugar. Add the Aperol and boil for 2 minutes.

Pour into sterile jars and seal the jars tightly.
