Knöpfli Glaner style come from the Swiss canton of Glarus. The Schnziger is a special Glaner herb cheese, must therefore not be missing from these Knöpli. In specialized stores you keep just as with us the cone-shaped herb cheese.

Stir salt, flour, eggs, milk and water in a baking bowl. Allow to swell for 30 minutes. Defrost spinach in a baking bowl as directed. Grate scabby cheese. Remove spinach from baking bowl with slotted spoon. Stir spinach and cheese into batter.

Bring salted water to a boil in a saucepan. Scrape batter through a large-holed sieve or colander into the boiling water. Cook until done, never bubbling. When Knöpfli float to the surface, remove with a skimmer, rinse and drain.

Pour the knöpfli into a preheated bowl. Melt butter in a frying pan and pour over the Knöpfli form. Serve immediately. Preparation: 10 min without swelling time Preparation: 20 min
