For the pork tenderloin in dumpling coat, whisk together milk, egg, butter, salt and grated nutmeg and pour over bread cubes. Press the mixture together a little. Preheat oven to 180 °C.
Season pork tenderloin with salt and pepper and sear in oil until hot all over. Place a piece of aluminum foil so large that the fillet can be comfortably wrapped in it. Spread the white bread mixture in the middle, place the fillet on top and wrap it up. Place fillet on rack and bake for 30 minutes.
Cook vegetables in salted water until al dente and drain well. Stir-fry in 2 tsp oil. Slice pork tenderloin in dumpling coat and serve with vegetables.
