For the pork steaks on Gorgonzola sauce, preheat the oven to 80 °C and heat a plate.

Season the pork steaks on both sides with salt and pepper. Roast in hot clarified butter for a total of 3-4 minutes, depending on the thickness. Immediately transfer to the preheated platter and reheat in an 80 °C stove for 20 to 30 minutes.

In the meantime, extinguish the drippings with port wine or sherry and set aside.

Put the Mascarpone-Gorgonzola in a roasting pan, mash it with a fork and let it melt. Add the drippings and sour cream and cook to a creamy sauce.

Season strongly with the juice of one lemon, salt and freshly ground pepper.

Before serving, pour the rendered gravy from the pork steaks to the sauce, boil the sauce again and serve the pork steaks on Gorgonzola sauce.
