For the chestnut chili, soak the beans in a bowl of cold water for 4 to 5 h and then strain. Heat oil in a pot. Add beef and brown.

Add garlic cloves, onions and tomato puree and continue to sauté with the meat. Add the chestnuts. Add red wine and water.

Add pepper, salt, paprika and galangal and cook gently for 1 hour until meat and chestnuts are tender. Season to taste with salt and pepper and add a little water if necessary.

Serve the chestnut chili hot.
