For the pork lung roast wrapped in bacon, wash and dry the pork tenderloin. Season well with salt and pepper, wrap with bacon and secure with kitchen twine.

Heat clarified butter in a pan, sear pork lung roast on all sides. Put into the preheated oven and roast at 150° convection oven for about 30 minutes. Remove the meat from the pan and let it rest for a while.

Pour soup over gravy and thicken with sauce thickener. Cut the meat into slices about 3 cm thick and arrange the pork lung roast in bacon coat with the sauce on plates.
