For the parsley root soup, peel the parsley roots and cut into thin slices. Peel the shallots and chop finely.

Heat butter in a pot and sauté shallots and parsley roots in it. Deglaze with lemon juice and wine and pour in soup. Simmer for 20 minutes.

Pluck the parsley leaves from the stems and chop. Add to the soup and puree with a hand blender. Now stir in the cream and season the parsley root soup with salt and pepper.
