Sauté diced onion and garlic in hot butter. Dust with flour and sweat briefly. Now extinguish with milk and wine while stirring vigorously. Pour in the hot beef broth and let the soup simmer at a low temperature until slightly creamy. In the meantime, fry the garlic slices in hot butter until golden. Remove and set aside. Finally, season the garlic soup with salt and freshly ground pepper to taste and stir in the sour cream. To serve, sprinkle with chives and garlic chips.

Tip: do not let the garlic chips get too dark or they will taste bitter.
