Pork Medallions Au Gratin

Dice bacon very finely.

Rub oyster mushrooms with kitchen roll and cut into strips. Cut spring onions into fine rings.

Chop parsley, grate cheese.

Fry bacon at low temperature, add onions and mushrooms and steam for 4 minutes until soft.

Add cheese and crème fraîche to mushrooms form and stir through.

Season pork medallions with salt and season with pepper. Fry in hot oil for 2 min on each side.

Grease grease pan or ovenproof dish. Place medallions on it. Put a tablespoon of the mushroom mixture on each medallion.

Place in the oven and bake at 200°C (gas mark 3) for about 25 minutes.

Our tip: Use a deliciously spicy bacon for a delicious touch!
