For the leek salad with ham, cut the leeks in half lengthwise, wash and cut into 3 cm long pieces. Blanch the leek pieces in boiling salted water.

Then rinse with cold water and drain well. Cut the ham into strips and arrange on the plates with the leeks.

For the marinade, mix well the vinegar, oil, 2 tablespoons of water, mayonnaise, mustard and salt and pepper.
