A great cake recipe for any occasion:

Knead butter, powdered sugar, flour, egg yolks and milk together to make a smooth shortcrust pastry. Wrap in plastic wrap and refrigerate for 1 hour.

For the topping, stir together sugar, hazelnuts, rum, cinnamon and egg whites until spreadable. Roll out shortbread dough into a sheet and place on a baking sheet lined with parchment paper.

Spread hazelnuts on the dough and bake in a heated oven at 200 degrees for 20 minutes. Rinse the currants and remove them from the panicles.

For the meringue, whip the egg whites until stiff and gradually add the sugar. Fold the currants into the meringue.

Spread the meringue mixture on the pre-baked, cooled base. Bake the cake in a heated oven at 180 °C. Decorate with redcurrant shoots.
