For the apricot poppy seed cupcake, first mix the yogurt with the apricot juice, sugar and oil. Then mix in the flour, poppy seeds and baking powder.

When everything is well mixed, add the eggs. Pour the batter into the greased pan and microwave at 850 watts for 10 minutes.

Turn the cake out of the pan. Melt 1/2 cup of Candy Melts in the microwave (850W) for 1-2 minutes, stirring every 20-30 seconds. Spread over apricot poppy seed cupcake with a spoon.
