Wash the lentils and place in a pot with beef broth.

Wash and peel the leeks, celery and carrots, cut into bite-sized cubes and add to the lentil soup. Cook gently over low heat for about an hour.

Cut bacon into small cubes and render in a hot pan, fry chopped onion in this fat and now add this mixture to the lentil soup. Season to taste with salt, vinegar and pepper.

Cut the sausages into slices and warm them up briefly in the lentil soup.
