Instructions:

For gratinated cauliflower with caramel potatoes, wash and clean the cauliflower and potatoes. Cook in salted water in a large pot for 10-15 minutes.

Preheat the oven to 180 degrees top heat. For the gratin sauce, heat rapeseed oil and brown the flour in it.

Pour in milk, mix well and boil for a few minutes. Remove from heat, season with nutmeg and salt and let cool slightly.

Mix crumbs and parmesan with a pinch of salt. Mix the gratin sauce with the egg.

Place the cauliflower in an ovenproof dish and cover with the sauce. Sprinkle the Parmesan crumbs on top and gratinate in the oven for about 20 minutes.

Heat the canola oil in a pan and fry the peeled potatoes until brown. Sprinkle the powdered sugar and a pinch of salt on top.

Let caramelize for 1-2 minutes, shaking the pan several times.

Lift the cauliflower out of the dish and serve the gratinated cauliflower with caramelized potatoes.
