For the gourmet fillet with mashed potatoes, wash the pollock fillet and pat dry then place in a lightly greased baking dish. Mix the breadcrumbs well with canola oil, chopped herbs and the grated Parmesan and season with salt and pepper.
Pour the breadcrumb mixture over the fish. Place the butter flakes on top and bake in a preheated oven at 200 °C for 40 minutes until golden.
Serve with mashed potatoes and carrots or potatoes and celery.
