For the apricot mousse, strain apricot jam. Mix apricot juice with gelatin according to package directions. Add sugar.

Divide among four nice glasses. Beat the egg whites until very stiff and fold in the apricot jam, carefully pour this foam onto the jelly and decorate with edible flowers.
