Instructions:

Tuna-lemongrass spread Cut tuna into small cubes (about half a centimeter edge length). Finely chop lemongrass, ginger and lime zest and make a marinade with sesame oil and tomato juice. Season with salt and sugar. Add the tuna cubes and marinate well (about one to 120 minutes).

Carrot- cilantro spread Cut carrots into finger-sized pieces and chop the ginger bulbs into small pieces. Lightly sweat the carrots as well as the ginger in sesame oil. Roughly chop the almost still raw amount (the amount must not become mushy).

Then mix with the freshly chopped coriander and season strongly with salt and freshly ground pepper.

Mashed potatoes Boil potatoes with peel in salted water for about 20 minutes.

Then remove the peel and press through a potato press. Grate the mountain cheese into the still warm potato mass and mix with the sour cream or crème fraiche and the finely chopped onions. Season to taste with salt and freshly ground pepper. If you like, you can also fold in a little bit of cumin (cumin seeds). But be careful, just a touch. Cut the chives into rolls and add.

Form the spreads into small dessert bowls, bring the bread to the table separately (sourdough bread is recommended). Possibly also finish the spread on the spot and put a second loaf on top.

Our tip: Fresh chives are much more aromatic than dried ones!
