For the roasted kale, remove outermost leaves from the cabbage. Peel and wash the cabbage leaves one by one, cut out the thick center panicles.

Cut kale leaves into strips about 4 cm wide. Peel garlic and chop finely. Heat lard in a saucepan and fry the cabbage in it, add garlic, salt and pepper and let the cabbage fry covered, turning it over and over until it is done.

Serve the fried kale as a side dish.
